When I log in to iCloud and choose mail preferences it doesn't give me the option to delete or change the IMAP email address. It's one that I really need to change as it's in my ex husband's name and I really don't wish to see that every time I send an email
Unfortunately you wouldn't be able to delete that email if it's tied to your Apple ID, or if that's the email you got when you signed up for an Apple ID.
You may want to consider creating a new ID.
If you create a new Apple ID, you will lose access to your previous purchases. You try setting up Family Sharing between the 2 IDs so you could access your data/purchases.
