When I first started using my iPad, it asked if I wanted to use my cell number for iMessage and I said no, now I can’t it to recognize it. I added it to my iTunes login but it will not show up in messages. It only uses my email address.

Presumably your "cell number" is an iPhone's number. Otherwise, you cannot use it.
