I used to have an i6 phone and I could plug a cable into it and then play my music thru my PA system. I now have an i8 Plus and I would like to do the same thing. Is this possible?

Yes, of course. Presumably you used to plug an audio cable into the headphone jack of your iPhone 6. Your 8 Plus should have come with a small "Lightning to 3.5mm jack" adapter cable, which provides the same headphone connection to use with your existing cable for your PA system.
