In order to change your work out from a timed one as you have it set at the moment to an open Goal, you will want to tap those three little dots in the upper right corner of the work out you see. Have a look at this info from the following article:

Set a goal. Tap, then choose a calorie, time, distance, or open goal (meaning that you’ve set no particular goal but still want Apple Watch to track your workout). Turn the Digital Crown or tap + / – to set. When you’re ready to go, tap Start.
