What happened to the swipe left feature in messages to delete the conversation? I loved that and hate being prompted again to delete when I already told it to delete.

If you want to delete an entire thread, you swipe left, tap delete, then, a confirmation pops up from the bottom of the screen. That's the new bit.

I currently find it a bit annoying as it means I have to relearn some muscle memory patterns. I'll get over it though and, in a few days, forget it was ever any different. I've found that, as long as I don't let myself get upset about small changes like this, I adjust quickly.
And that's what this fuss is all about? I deleted a few messages right after I updated to 11.3 and it seemed normal to me. I've got far more going in my life to worry about than a simple confirmation over whether I really want to delete something. It's been this way with email for eons.

Some people don't deal with change easily.

Apple changed it. Probably because lots of people complained about deleting messages accidentally.
You can let Apple know what you think of the change and what you'd like to see here:
