This guy I kicked from an iMessage group chat is still able to text in it. He is no longer in the group but is still able to text in the chat. I don’t know how this is possible but is there a way I can make sure this never happens again ?

I understand you no longer wish to receive messages from an individual who was previously in a group chat. Removing them from a group won't prevent them from texting you. If you no longer wish to receive texts from a contact, you can block them in the Messages app. Here's how:
Block phone numbers and contacts on your iPhone, iPad, or iPod touch
Messages
If you're in Messages, open the conversation, tap, then tap the name or phone number. Scroll to the bottom of the Info screen, then tap Block this Caller.
Messages that are sent or received won't be delivered. Also, the contact won't get a notification that the call or message was blocked.
