The matter of vodafone insurance is irrelevant. They agree to pay the charge less the $200 excess and they appear to recognise that iPhone 8 may cost them more.
You can only get the price after the Apple store have examined the phone.

Wrong. Vodafone says exactly what it will pay and tells the OP in its schedule to go to an Apple store.
