Trade in Macbook Pro for a refurbished MacBook Air

Any idea if I can trade in my MacBook Pro (from June 2011) and then use the credit (calculated at £195) toward an apple certified refurbished product from their website? Do I have to buy 'new' once I have the gift card apple credit?

No. At least not in the U.S. refurbished site. You can use any payment there that you can use for other online purchases from Apple. You can verify that by going to the refurbished site, select an item to add it to the Bag and then scroll down:

What payment methods can I use?

During checkout, you may use any online payment method available on the Apple Store. Learn more about Apple Pay.
