how do I change the default mail sender

How do I change the default mail sender in my iPhone (iPhone 7 Plus - iOS 11.3.1). I tried following these instructions from a Google search

How to set a default email account on your iPhone and iPad

Launch Settings from your Home screen.
Tap Mail, Contacts, Calendars.
Scroll down and tap Default Account.
Tap the account you would like to use as your default mail account.

but could not see the "Default Account" option when opening mail. I assume that as I can only open one at a time I need to change the default in all three.

If you have more than 1 email account:

Settings>Mail... scroll down to the last option, which should be "Default Account". Tap on it and choose a different account.

If you have only 1 email account, you need to add (one or more) different accounts:

Settings>Account&Password>Add account
