How can I retrieve a text thread that was accidentally deleted

You would need to restore an iCloud or iTunes backup of your iOS device from a time when the messages were on the device. Note that the restore will replace all data, not just texts, with the data from the time of the backup. Restore your iPhone, iPad, or iPod touch from a backup - Apple Support
