In general there should be a more or less linear degradation. However, it’s really using round numbers. 80% and 1000 cycles seems a little to perfect to be more than just a rule of thumb. Apple typically runs an official battery diagnostic for customers requesting replacement, and I believe 80% or lower battery health is required for Apple to perform their battery replacement service.
Heck - mine was delivered at about 94% battery health new in the box. I think it was made about 8 months before I bought it. It’s at 86% now with fewer than 100 cycles. I dont believe mine is typical, but I don’t believe Apple will replace the battery while condition status is still “normal”.
