Are you meaning that you want to record something while calling someone? Or headphones on you iPhone 7. You can use a in ear headphone or alle other Bluetooth headphones on you iPhone 7 while calling someone.
In-ear-monitor is a feature which helps us to listen our own voice in real time when we are using earphones. So here the advantage is for the earphones with the tight earbuds which don’t allow us to listen our own voice while we are talking on a call. To check if you are able to listen to your voice you can scrub your finger on the earphone’s microphone.
I'm unaware of any such feature.
However, everything I can find about In-Ear-Monitor states it is used by singers to hear their voice while performing so as to keep correct voice modulation and pitch during the performance.
Such modulations should not be required in normal talk, and should have no effect in a phone conversation.

I haven't heard that term in many years! Brings back memories.
Took me a while to dredge the term up from the depths of my memory. But, I remember people complaining about the iPhone and how it handled sidetones some years back.
I haven’t seen this feature working but I feel that this feature works during the call.
