I'm using iTunes 12.7.4 and macOS 10.13.4 on a mid-2011 mini.
When I put an audio CD into the CD drive, the iTunes window shows the contents of the CD. The display has six columns (as I currently have it set up). The first column gives track numbers, the second column is headed by a checkmark and is composed of boxes which can be checked or unchecked. Then Name, Artist, Album, and Genre. Other than the first two, you can add, delete, and reorder the columns. Checking or unchecking the boxes in the column headed by a checkmark affects which songs are acted on when you click the "Import CD" button in the upper right of the window.
I can't immediately think of a reason why iTunes would only burn the first song in a playlist, I'm afraid.
