I like the random feature of iTunes, but it often chooses to play the second or third movement of a symphony while bypassing the first movement. I would like to find a way of playing the complete symphony.

Go to the Controls menu and look at your "Shuffle By" setting (see below). If it is set to Songs, change it to Albums.

If you have the original discs, reimport and join the movements.
If not join tracks using Garageband or Audacity to join the tracks. Alternatively use https://dougscripts.com/apps/jointogetherapp.phpif you have a lot of tracks to merge.

Use the app 'iMovie' to join the movements together so you have just one audio file. Then, add that file to iTunes.
