I am curious to know if the Original apple watch will still work with my phone, even if it can’t run watchOS5.
Yes of course it will still work. You just can’t get the benefits of watch OS5.
This has to be pure speculation because WatchOS 5 doesn't even exist yet. Unfortunately my crystal ball is on the wrong frequency today so all we can do is note that some users have never updated, and previous versions at least back to WatchOS 3.x are still working with current iPhones.
