It depends. If it is a SMS (green text bubbles), you can't. But if it is iMessage (blue text bubbles), this is what you can do:

go to the group chat
tap the info button in the top-right
you can delete contacts by swiping left on their name and tapping 'remove'
you can add them by tapping the 'Add Contact' button
