Two entirely different questions.

If you are not using Messages in iCloud, then you can erase your device and restore it to a backup that you made before you deleted the messages:

Restore your iPhone, iPad, or iPod touch from a backup - Apple Support

If you are using Messages in iCloud, then there is way to retrieve deleted messages at this point in time.

For deleted Photos, go to the Recently Deleted album in your Photos app to recover them for up to 30 days after the deletion.

Here’s a trick

If your backups are done frequently this should retrieve your deleted text...

Apply following steps:

1) Make a backup now (record the time)

2) Resore to a point from backup when you deleted your text

3) Retrieve message and copy it (I’d email it to myself)

4 Finally, restore to initial backup (step 1)

This should recover your deleted text but is not an elegant solution at the same

1.) If you perform a backup now, it could very well replace an earlier one that had the messages on it. And what is the point of recording the time? If you make a backup today, it is dated today.

2.) There is no "restore to a "point" from a backup. You restore from a backup. If you still have one out there from before you deleted your texts (and if you were not using iCloud for Messages at that time), then you could, in theory, restore from that backup, and the messages would be restored. Everything else since that point in time would be overlaid. Also, only iCloud keeps multiple backups. If you are backing up to iTunes, you would only have the one.

If the assumption here is that the OP was not using iCloud for Messages, and that they did have multiple backups to iCloud out there already, then I would recommend that the "new" backup that they make just prior to restoring to the one with the deleted Messages would be to do that new backup to iTunes rather than iCloud.

That way, there is no chance that the new backup will overlay any older iCloud backup data that you may be trying to retrieve.
