My wife would like to delete her name from sent email even though I originated it. I have gone to Apple>Preferences>Mail and it shows my name instead. How to dress the issue?

Check the email account information for the affected account to see if it was configured to access the email provider's server with your wife's email address instead of yours. The Mail app will use the email address entered in the Email Address field on the Account Information tab for each account.
