my phone got stolen in my last trip and i didnt do a backup so i am asking if there is anyway that i can do remotely because the phone is offline. Shall i give you my icloud account and you can back it up for me? I dont know

No. You cannot do remote backup as Giulio already suggested.
But you can passcode enable it, swipe you data if you have Find My iPhone ON before the lost.

The device must be in your hands to perform a backup via iCloud or via iTunes
You can't do it remotely, even if it were online.
