I've got this s8 plus and I would like to sell it before buying myself this year's iPhone. Of course I need the information in it on the iPhone. As I'm giving the s8 away I have to format it, is there a possible way to back up my photos, documents, apps, etc, and import them into the iPhone while setting it up after I gave my s8 away?
If you’re talking about a Samdung S8 you should be able to connect it as a USB device on your computer and simply copy most items out of the phone. The difficult area is usually stuff like mail and calendars, where it depends which apps you are using. In many cases you will still have your (recent) emails online on a server, so you might be able to just setup the new iPhone and it will find your mail history.
The apps that are on your android platform phone will not run on an iPhone so there is no reason to save those.

So you have a Samsung Galaxy s8? Can't help you with that model.
If you have an iPhone 8 Plus then you can do a backup either to your computer or to iCloud. How to back up your iPhone, iPad, and iPod touch - Apple Support Then when you set up your new iPhone you do so from your backup (it will ask if you want to do this).
