I don't understand what this means, nor what the issue was that caused my computer to seize and require a restart. I just need an explanation in layman's terms, if anybody can help me out! Thanks

In order to answer that question you need to follow the suggestion below and post the report. Afterward we will be able to analyze the report and tell you what else needs to be done.

I suggest you use the program created by Etresoft, a frequent contributor. It will provide a snapshot of your system which we can analyze to possibly determine the cause of your problem. Please use copy and paste as screen shots can be hard to read. On the screen with Options, please open Options and check the bottom 2 boxes before running. Click “Share Report” button in the toolbar, select “Copy to Clipboard” and then paste into a reply. This will show what is running on your computer. No personal information is shown.

Just in case you need a second opinion on the uninstalling of Sophos.

Sophos does absolute no useful function on a Mac. About the only thing it is good for causing problems.

Hopefully you will be able to get it uninstalled before it causes irreparable harm to the operating system.

To uninstall Sophos, follow instruction at Sophos Anti-Virus for Mac: How to uninstall - Sophos Community

It has been my experience when called in to help with Macs that are having problems, the installation of AV software can cause so many problems with the operating system that only solution is to reformat and reinstall the operating system again. It is a really nuisance but after the AV software has managed to corrupt it that is about the only solution to install it again.

This is not only true for Sophos but for just about all AV software. It is also true for cleanup software such as CleanMyMac also. They are all to be avoided.

You do not appear to have attached your Time Machine backup drive since April 9 2018.

If you choose to connect your backup drive only from time-to-time, try to do so at least every-other day, at minimum. Otherwise, it may take several hours of computation just to decide what needs to be backed up, before any files are transferred.

If you connect it more often, it will be complete in a matter of minutes. This is beach it can 'take the shortcut' by using a system data structure called the File System Event Store -- a list of what folders have changed recently.
