So I have a Apple Watch series 3 aluminum with Nike sport band. I was swimming with it in the pool and then the Digital Crown began to act sticky. I was wondering why this happened if the watch is waterproof and designed for swimming?

Probably there was some accumulation of debris under the Digital Crown but not causing a problem until it got wet during your swim. Clean the watch and crown as directed by Apple, Cleaning your Apple Watch - Apple Support and hopefully all will be well again.
