I hate two factor authentication, which is an unacceptable intrusion on my right to conduct my own activities as I see fit. Once I buy a device, Apple has no right to dictate how I use it. Is the only other option to stop using Apple products?

There may be another option in certain cases if you turned two-factor on within the previous two weeks. See the following from Two-factor authentication for Apple ID - Apple Support
If you already use two-factor authentication, you can no longer turn it off. Certain features in the latest versions of iOS and macOS require this extra level of security, which is designed to protect your information. If you recently updated your account, however, you can unenroll for a period of two weeks. Just open your enrollment confirmation email and click the link to return to your previous security settings. Keep in mind, this makes your account less secure and means that you can't use features that require a higher level of security.

I have never turned on two factor authentication and now am told I can’t turn it off. I reset my I Pad two days ago because it wasn’t working properly. I can find no precise instructions how to turn off Two Factor Authentication which I never requested and don’t want.
I cannot abide Two Factor Authentication. Is the only option to stop using Apple devices?
