iTunes and iPhone X sync

Hi,

I bought an iPhone X over a month ago and after a holiday I now want to do a back up in iTunes, however, when I connect the iPhone to iTunes it only gives me the option of restoring the iPhone with an old back up or as a new one, which I don't want to do. How can I sync my iPhone to iTunes without restor as it doesn't give me the option of skipping that step?
