How do I remove some holidays
With a recent update there are too many random Holidays on my calendar. I don’t see any way to remove unwanted ones. Is there a different US Holidays list that can be used?

You cannot remove individual holidays. You can, however, turn off the provided U.S. Holidays calendar by opening the Calendar app, tapping "Calendars" in the center bottom then unchecking the box next to U.S. Holidays.
