I have the "."Shortcut turned off in settings. I've toggled it, but it keeps adding a period when I add 2 spaces... unless I wait a couple seconds. Is there another place to disable it? I'm using Pages 4.1, iOS 11.4.1, iPad 6

That makes sense.
Try using option-space instead of space. That places a non-breaking space, a different character from the 'space', which should be enough to discourage the auto-period replacement.

Follow the advice by Sparkleberry (if your profile for iPad is correct).
Use a monospaced font such as Courier for both the lyrics and the guitar chords.
Then there is no need to set Tab stops. Simply type spaces to align all chord names above the lyrics.
Been there, done that!

Yes, I did that, thanks.
I am typing guitar chords above the lyrics, and sometimes the changes happen too soon to use a tab to go to the next chord.
