How can I open the windows of all of my external Hard Disks on the desktop....?
When I open them now only one is opening at a time...never all together as I want them to.

Select them all and Control (right) - click on the last selected and choose Open from the contextual menu:

What OT showed you; or you could just selected and press command-O.
Maybe it is opening them in tabs in the same window, rather than separate windows?
If so, go to Finder's Preferences, click on General, and UNcheck the box that says
"Open folders in tabs instead of new windows"
I did uncheck the "Open folders in tabs instead of new windows" and even restarted the Mac but nothing changed...
something doesn't work in Mojave or I am doing (or done) something wrong...
even the "Sound" in System Preferences doesn't open at all....(I expect the drivers from Stieberg Software though)...
I even reinstaled the Mojave...and tested possible Viruses...
Nothing changed...
I'd love to hear any idea about all that is happening....
You seem to have other problems, which may or may not be related; often this indicates something is wrong in your particular system.
I recommend you run Etrecheck and post its report here, so we can look for possible causes.
open the first one.
Go back to the Finder's File menu and choose "New Window" and open the next one, and so on.

Select all the drives at the same time and choose Open off the finder's File menu.
I did it and it only opens one again...not all of them as I need to
