This is what we would all like to see yet it cannot be done. Heaven only knows why. It was available on Word for Mac up to the 2011 version, then Microsoft dropped it too. Again, heaven only knows why. The net result is that on neither of the two main word processing programs available on a Mac computer can you work on a darkened page. Unbelievable, but apparently true.
System Preferences : General : Dark mode. Pages v7.2 will present all of the Dark mode features it is programmed to display. Pages v7.1 is not designed to detect Dark mode hints.
On my system (Lion and Pages '09), I can get white text on a black page by going to System Preferences > Universal Access > the Seeing tab > in the display area select "White on black". Everything else will be reversed, too. It probably won't print that way, though.

I can also do the following:
1. On the More tab of the Text inspector, select "Paragraph" and then choose a black color.
2. On the Text Color button on the Format bar, choose a white color from the Color Matrix.
3. Deselect "Paragraph" when you are done.

Doesn't Pages 7 let you do something similar?
ie Change the background color and then choose a text color over that?
The only thing is you do not get the simplified no UI appearance of 3rd Party Text Apps.
Hardly important, or a good idea.
If you want to type white text on a black background, which used to happen on old terminals only because it was cheap hardware, there are many free Text Apps that will do the job.
