How can I add bcc: field to all outgoing emails?

I need to "hide" the recipients of all my emails by law. However, sometimes when I pull up a new message by "replying" to an earlier message sent by myself, the message header contains ONLY the "cc:" field, NOT the "bcc:" field (which would otherwise be automatically populated by my own email address. How can I force mail to include the "bcc:" field in EVERY message I create, no matter whether as reply (even to myself) or forward or new edit?

When you click the compose button to create an email, you will see the send button, and an adjacent button with a list on it. Click that, and check Bcc Address Field from its menu. This will immediately appear in the current compose address fields. To remove the Bcc field, repeat the second sentence.

Thanks. Now it seems obvious - I'm feeling foolish. However, how come that the "Help" menu for just about any Apple App (including Mail) has become totally braindead and cannot even search for a term like "bcc"?

Try Bcc or BCC in that Help search field, and the first item when you roll over it will highlight a menu item on the View menu, and the short cut to enable/disable Bcc Address Field.
