You should not "uninstall iTunes" and simply leave a void where iTunes used to be.

See iTunes for Mac installers. Removing it completely is generally not easy.

Oh, it is not the iTunes application that is charging your card. It is something you purchased or subscribed to, perhaps using iTunes.

Start here, figure out what you bought.
