Can I insert a YouTube link onto keynote and have it show up as the video or will it just be a link to YouTube?

If you create a link to a Youtube video, Keynote will open Safari at that page and play the video.
Right click the object on the slide and select Add Link then Webpage

It will only be a link, due to keynotes limits, you can’t show a video without opening it in your browser, unless you have Microsoft PowerPoint on a PC then you can’t show it as a video sadly.
Unless your Mac supports Liveslides or Webpage.
Find your YouTube video, copy its link, convert it to a mp4 file via a third party program. Put your mp4 on your desktop. In the slide in Keynote, insert it via Insert — Choose. It will be installed into your slide. Adjust its side and placement; you can even set the starting and end points of the file if you wish.
