I updated to iTunes' latest update, now my iPad won't work unless I update my old iMac 2007. How can I undo this iTunes update?

I updated to the latest iTunes, and now my iPad won't sync unless I update my old iMac 2007 with version 10.11. How can I undo this update or is it even possible? Apple did not warn about this.

Unfortunately downgrading iOS is not supported. iOS 12 needs iTunes 12.8 or better running on OS X 10.11.4 or better. A workaround if that isn't possible would be to sake a subscription to either iTunes Match or Apple Music to get music to your device and switch to iCloud for backup and data transfer.
