I updated to the latest iTunes, and now my iPad won't sync unless I update my old iMac 2007 with version 10.11. How can I undo this update or is it even possible? Apple did not warn about this.
Unfortunately downgrading iOS is not supported. iOS 12 needs iTunes 12.8 or better running on OS X 10.11.4 or better. A workaround if that isn't possible would be to sake a subscription to either iTunes Match or Apple Music to get music to your device and switch to iCloud for backup and data transfer.

Thanks. However, it worked fine on 12.8 but not on 12.8.1, so can I go back to 12.8?
One more question: My iMac 2007 is running Yosemite. Where can I find El Capitan, which I assume runs the minimum 10.11. Or am I SOL?

I just upgraded successfully and the iPad now syncs. Now I know why when I plugged the iPad in, I got the message that the battery was "not charging". Thanks for your help, it's much appreciated.

The USB ports on a computer typically cannot deliver enough power to allow an iPad to charge as quickly as it can with the dedicated charger.
