When I try to change the font on my Safari browser, the Appearance tab in Preferences does not appear. Where is it located?

When I try to change the font on my Safari browser, the Appearance tab in Preferences does not appear. Where is it located?

Apple removed Appearance tab from Preferences a while ago.
If an article is Reader ready, you may be able to change the font size and background.
Safari > Preferences > Websites > General > Reader

Thanks. Why the removal? Seems silly. Chrome/Firefox/Opera allow for font changes.
