It would be nice to have an option in the settings to hide the notch via the iOS on the iPhone X and Xs models.
I don't think it would be much effort to include this feature in the next iOS update.
To be honest I would like to have the option to use the notch area or not my iPhone!

You can't hide the notch. It houses the TrueDepth Camera system that powers Face Recognition.

As I said, the notch is hardware. It's where the camera is. There is no screen there. It can't be changed by changing the software.
Ah, so you don't want to hide the notch at all, you want to hide the areas on either side of the notch. Very different thing. Got it.
It seems unlikely to me that, now that applications have been written to deal with it, that Apple will change it. Apple does what Apple thinks is best.
Here's an interesting opinion piece:
Sorry, I don't want to appear rude. But I was thinking more on the lines of display area, would it not be possible to define the display area in the iOS not to include the two areas to on the right and left of the notch and fill these areas with a colour that matches the colour of the notch. So you are left with your iPhone use using a rectangle display area.
