How to continue using current iTunes without a system update?

I'm trying to download new songs from my iTunes onto my iPhone 8, but it said I need an iOS of 10.11 or higher. I have a Macbook Pro from 2011 so I don't think I'm able to download 10.11 as I tried to get El Capitan and it said it wasn't supported. Is there any way I can still use my current iTunes to sync my music without a system update?

Download the current 12.8 installer for iTunes from https://www.apple.com/itunes/download/.

Unlock your iOS device and connect it to USB.

Reinstall iTunes from the .dmg that you've downloaded.

During the installation it should announce that a further software update is required.

Install that and iTunes should see your device.
