It appears that the only alternatives we have to set date and time automatically in Mojave System Preferences are Apple servers. Does anybody know how accurate this time is? Is there any to choose other servers?

To my knowledge the Apple time servers are within a second or two of the NIST servers. If you would prefer those, you can unlock System Preferences > Date & Time > Date & Time and type in "time.nist.gov" assuming you are in the US.

I use the Apple Europe time server and it's always spot on.
