The watchOS 5.1 update bricked my 2-week-old Watch Series 4 also. After the update was installed, the reboot hung with the Apple logo displayed.

Apple support told me that the only fix was to send my Watch in for repair, so 7-10 days without my new Watch. Had my Watch not been under warranty, the repair cost would have been $295! Not happy, especially because my Watch automatically restarts and hangs after a forced shutdown, so its battery will likely totally discharge while in route to the repair facility. No software is running that would prevent the total discharge which could permanently damage the Li-ion battery.

I would like a replacement Watch, but my local Apple Stores don't stock 44 mm Space Gray Watches with black Sport Loop bands, and I don't want a different model.

Apparently, Apple has now pulled the 5.1 update.

I don’t think apple support got the wind of the happening otherwise they would have told me flat out that they have an issue instead of spending close to an hour trying to diagnose what happened being telling me to send it in. Support did try to see if it could be exchanged or repaired and called my local apple store but they were not exchanging or repairing.

Anyway, I and getting a new one tomorrow which is a good thing

I faced this problem this morning and the most curious was that I did not update my Apple Watch Series 4 Nike to the WatchOS 5.1 (I still on WOS 5.0.1). For me what solved was, under the Watch app on Iphone:

General>Reset>Erase Apple Watch Content and Settings

After reset, I didn't restore the backup, I've configured as a new Watch.

If I customize the watch faces, the problem returns... I was unable to identify witch face or customization trigger the error...
