completed this update and the new emojis have not been added to my keyboard. Am I missing something?

Are you sure the update completed? Settings > General > About > Version.

yes. it shows update is completed, it rebooted and shows 12.1. I am looking for the emoji with redhair.

It is not a very bright red but it shows up on mine.
