How can I change to full screen mode in Mail on my iPad, especially in landscape mode? I want to view an email in full screen landscape mode.

Asuming that you are using the native iOS Mail App, you simply have two viewing options for any email message - either Landscape (with a persistent left-pane occupying 30% of the screen) or Portrait (where you can hide the left-pane).
That‘s it - no other native email viewing options - so the nearest thing you can get to full screen is to use Portrait screen mode.

You can switch to other third party email clients to get a full screen email window, in iPad landscape orientation.
I use one called Edison Mail for iOS.

Works similarly to what older iOS Mail app used to do, plus a few more bells and whistles that current iOS Mail app doesn't have
in other words, it‘s not possible.
or rather, apple decided they would deliberately not make such a basic feature possible because it’s so much fun to draft an email like THIS 😂😂 😅
Come on apple? Do your developers even USE your own products?

I’ll give it a try, but I’m pretty sure my corporate email only allows me to use the apple Mail app (they understandably don’t want to have to vet and sanction every 3rd party app to be 100% sure there‘s not a security gap)... we can’t even use iOS-outlook for work email...

Drafting an email in iOS Mail on iPad has always been like this for a long as I can remember.
It won't be much different than this in other third party iOS Mail client apps, either, I’m afraid.
I thought you were referring to viewing an email in full screen mode in landscape orientation.
That can't be done with the default iOS Mail app.
