Microphone greyed out on Apple Watch
whenever I receive new messages (whether sms, iMessage, WhatsApp) the dictation microphone is greyed out. This hasn’t been the case until very recently. Any ideas what’s changed?

I understand the microphone on your Apple Watch is disabled. Have you recently updated to iOS 12.1 and watchOS 5? If not, that is the first thing I would try to address this issue. After updating, restart your iPhone and then your Apple Watch to reinitialize everything.
Also, check the settings on your iPhone and in the Watch App to make sure that Siri is still enabled and there are no restrictions for Siri or dictation.
