My wifi button on my iPhone 6 in setting will not turn on and remains grey. I have attempted to erase and reboot my phone with still no access to wifi. I have the latest system update iOS 12.1. Any suggestions?

Try this:
Settings>General>Reset>Reset Nework Settings, keeping in mind that this procedure resets Wi-Fi networks and passwords, cellular settings, and VPN and APN settings that you've used before, but NOTHING else.
When done, restart your iphone then test it.
If you have no improvements, have your iP6 inspected at your most convenient Apple Store or Authorized Service Provider: Apple - Find Locations - Location Selector
