What are some of the human emojis not able to change to people of color? The stay white

Why are the couples and family emojis not able to change to people of color? I would like for them to look like me as wel!

Not entirely accurate... Unicode "assigns" emoji codes & developers design the glyphs

There are also some "optional" slots that can be unique to the "Typeface"
