I have an iPhone 8+ and I’ve had it since April 2018. I’ve made monthly payments on it since then and I wanted to see about trading it in for a Watch with cellular because I don’t need the extra features. Just talk and text in all reality

Because Apple designed it that way. Setup requires an iPhone, and I don't know of any carriers that will activate the watch if you don't have an iPhone with them as well.
