I have a 2017 iMac 27 inch with a fusion drive running High Sierra. Does Mojave support this machine, and should I update to Mojave?

Whether you should update to it however, depends on what you do with the computer and what apps you require. Do you need Mojave for something specific?
Unless you require access to the Metal 2 video and 3D rendering capabilities there's no pressing need to update except for the security updates it brings.
Beyond that, its entirely up to you whether you update or not.

For what its worth, High Sierra also supported Fusion drives. You may have been deceived by the FUD pushed out regarding APFS and Fusion drives, but that is what the internet is all about.
What stopped you from upgrading to High Sierra? If you balked at High Sierra, all of the issues that prevented you from upgrading to High Sierra still exists for Mojave.
The only change is that Mojave will now convert your Fusion drive to Apple’s new APFS file system. It does this during installation and you cannot opt-out.
