I have an old "early 09" MAC that I want to use as a display for my new-ish 2017 Macbook. Can this be done...and what type of cable do I need to make this happen?

If you mean a 27" 2009 iMac, then see Target Display Mode 2009 & 2010 iMacs. Otherwise, I have no idea to what you are referring, but if it isn't the aforementioned model then it cannot be used as a display.
