Is there a way to edit the emoji list? Apple keeps adding more and more which is awesome but there are so many I will NEVER use that it would be great just to have to search through the ones I like that aren’t in the frequently used area. If it can’t be done yet, it’s a great idea for the next update! 😉

You can make use of the Favourites/Frequently Used part of the process.
2 ways to do that.
In Messages create a New Message to go to your iPhone. Then send yourself various items that you think you might use like the Flag your your country, the most used Smilies and so on.
Or in any Finder window go to the Edit Menu and select Emoji and Symbols
Select Emoji in the list in the Character pane. Find the ones you want and then use the Add to Favourites button (it's on the right)
