I'm not quite sure how you mean "extract" from your sentence, so I'll include both explanations.
- If you already have the ISO image created from a CD and want to be able to browse the contents of it, simply double-click the ISO image name. OS X will mount the image just like a CD or .dmg file you would download.
- If you have a CD and want to make an ISO image:
-- Insert the CD/DVD.
-- Open "Disk Utility" (it's in the Utilities subfolder of the Applications folder).
-- Select the mounted CD (it's usually listed just under the drive's device name, as "xxx.xx MB Untitled 0" or "xxx.xx MB DoctorWho 0").
-- Go to "File" > "New" > "Disk Image from disk1s0 (xxxxx)..." (this may look slightly different on your machine).
-- Select a file name and location, and select "DVD/CD master" as the "Image Format", with no encryption.
-- The file will be created with a .cdr file extension, but it is an ISO image. If you change the extension to .iso, it will function exactly as the ISO images you've downloaded in the past.
