I also write spanish documents on Pages and had the same problem.. It's real simple to spell check for spanish:

Select the entire Spanish language document (CMD-A) and do the following:

1) Open the Inspector
2) Click on the Text button (4th from the left - the one with the capital T)
3) Choose "More" from the 4 options
4) There you will see a drop down menu with all the available languages you can do spell check on. Here change language to Spanish and you should see the misspelled words gradually reduce to only those in Spanish.

When you say that your spanish characters are missing ,what exactly do you mean? Can you make accents? (é, ó, á) or other symbols? (¿, ¡)

For Spanish characters: easy

option-e followed by the appropiate vowel = á, é, í, ó, ú
option-u followed by u = ü
option-n followed by n = ñ

also,

option e followed by the appropiate shift key and vowel = Á, É, Í, Ó, Ú
option-u followed by the appropiate shift key and u = Ü
option-n followed by the appropiate shift key and n = Ñ
