Is there any documentation online for the system requirements to install GS/OS 6.0.1? When I try to boot from disk 1, I get a "CANNOT LOAD PRODOS" message on the screen.

System Requirements Standalone Apple IIGS System 6 software requires an Apple IIGS personal computer with at least 1MB of RAM, ROM version 01 or 03 and one 3.5-inch disk drive, although configurations of 2MB of RAM and a hard drive is recommended for optimal performance. Networked systems require Apple IIGS computers with at least 768K RAM, ROM version 01 or 03 and appropriate LocalTalk cables. Exact memory requirement definition is rather dynamic because (like the Macintosh OS) you can add a variety of extensions. This makes the size of the GS/OS System file grow and shrink.
I would dare say that you have a disk error. Remember that those machinces are totally disk driven. If it cannot load PRODOS, it probably is because it can not read PRODOS.
Make sure that you have a working copy, then use CopyII+ to make a backup.
You were correct on that. I was trying to use an HD 1.4MB floppy with the hole taped over, but the drive doesn't like that. Once I found a real double density disk and wrote the image to that with Disk Copy 4.2 it booted right up.
HD disks use a different oxide than Double density. If you try to record the "wrong" format on them, they may appear to work fine, but your data can become unreadable in
minutes.
