roll over calendar info to the next year
I would like my "birthdays" calendar to automatically carry over to the next year like the U.S.Holidays calendar does.

If you are using the read-only generated Birthdays calendar into which Address Book data is placed, then it is already doing this.
If you are using a birthdays calendar you've built yourself, then you must enter the initial birthday as an annual recurring event.
If you are using a third-party utility like MenuCalendarClock or a set of AppleScript routines to do this, then you'll have to adapt them to accommodate your requirements.
